I made this rather tasty salmon dish for the first time on Friday night, and Kat was asking for fish recipes, so I said I’d post it here. It’s really easy, one pot cooking – my fave type!
750g baby new potatoes
1 tbsp wholegrain mustard
Juice 1 small orange
2 tsp clear honey
4 skinless boneless salmon fillets
2 red or orange peppers
250g sugar snap peas
2 tbsp olive oil
1. Preheat oven to 180C. Boil potatoes (halved) for ten mins until tender. Meanwhile, whisk mustard, orange juice and honey together to make marinade. Turn salmon fillets in marinade until evenly coated, and set aside. Deseed peppers and cut into thick strips.
2. Drain potatoes and tip into shallow ovenproof dish with peppers and sugar snap peas. Drizzle over the oil, salt and pepper, and then toss everything together. Put salmon on top of the veg, and pour over the marinade. Bake for 20 to 25 mins, and serve straight from the dish.
Although neither of us are huge salmon fans, we both really enjoyed it (and it’s pretty healthy, too!).
