Very disappointing boot sale this morning. Horrible weather, hardly any sellers, and I only managed to buy a pair of shoes for 50p to sell, and a pretty ‘Shoe Fund’ money box for 50p. Wish I hadn’t bothered getting up so early now.
So instead of my usual booty post, here is a lovely salmon recipe that I tried this week, which was really tasty, and felt like summer food.
New potato & grilled salmon salad with Dijon & parsley dressing
1.25kg new potatoes
4 salmon fillets (I used the slightly smoked ones, which worked well in this receipe against all the other strong flavours)
40g capers, drained and rinsed
150g cornichons, sliced
6 spring onions, sliced
3 tbsp chopped flat leaf parsley
For the dressing:
2 tbsp Dijon mustard
2 tbsp white wine vinegar
large pinch sugar
4 tbsp olive oil
1. Place potatoes in pan of boiling water and cook for 15 to 20 mins until tender. Drain and allow to cool for a few mins. Heat grill to high, season salmon and grill for 8 to 10 mins until just cooked through.
2. Toss poatoes thorugh with cpapers, cornichons and spring onions, and season. Mix mustard togetehr with vinegar and sugar, and add oil gradually to form a thick vinaigrette. Season well.
3. When salmon is cooked through, flake into large pieces. Dress potatoes with vinaigrette, scatter over the parsley and add the salmon flakes. Serve warm immediately, or leave to cool and serve at room temp.
Well worth a try.
